Churro Cookie Dough Protein Pies (Gluten Free & Low Carb)

Oh guys, cookies and cookie dough is my love language... add some Marigold protein bars and grass fed whey and my tastebuds are in paradise, and they are just another reason to enjoy my workouts... I've got my protein snacks to fuel my body.


No bake gut friendly and delicious cookie dough churro pie! One of the best parts of this recipe is the no bake part... so basically is just mix, pour and refrigerate type of method, extremely easy! But these cookie dough pies are gut friendly since we are working with grass-fed whey, organic cream cheese with probiotics and no gluten!



About these Churro Cookie Dough Protein Pies:

These are just every cookie dough fan dream! But with that I also wanted to include a twist, a fun a de delicious twist by just adding some of the Siete Foods Cinnamon Crisps (found these also at Costco!) and by also using Good Phats Keto Cookie Mix.


To add that extra crunch factor of this recipe I also included some of the Marigold German Chocolate Cake Keto Protein Bars, such a game changer! And it really brings up that extra taste of coconut from the german chocolate cake and that texture that takes these cookie dough bars to the next level.


Key Ingredients:

Adding some protein powder for extra creaminess and a satisfying filling. I have been also obsessed with the Marigold Creamy Vanilla Grass-Fed Whey Protein, their ingredients are always the best and the taste is always delicious too, this smooth vanilla is basically a healthy, dreamy and indulgent vanilla milk shake (keto and gluten free!).


And of course! Our churro factor thanks to Siete Foods Cinnamon Crisps, these are just so so good, paleo and vegan friendly. I actually have spotted them at Costco the other day and I was over the moon! But they are almost everywhere now; Whole Foods, Sprouts, Target, etc...



Cookie Dough Protein Pies and grain free, and with the crunch factor! These are simply perfect for meal prep, no need to bake anything at all to enjoy and attack that sweet tooth at any moment. The base is soft and the filling of these is creamy thanks the the greel yogurt... also source of probiotics!


I also used some grass-fed protein to add that extra protein and goodness. My favorite ones are from Marigold Grass-Fed Protein Whey in Creamy Vanilla and Rich Chocolate just made with the best ingredients... just love love love.


The Sweetener of these German Chocolate Cookie Dough Protein Fudge:

With a delicious addition of alullose instead of refined sugars for the win! In this occasion I used a homemade version of alullose from Rx Sugar which is made from foods while having no calories or a glucose impact.



Keto & Gluten Free Chocolate Chip Cookie Mix!

For the special touch of this recipe I decided to use some Keto Cookie Mix, this one is from Good Phats, my favorite one! Also gluten free and it's a game changer for this recipe... and such a simple way to make your own keto and paleo friendly cookie dough! Churro + Cookie Dough and a creamy greek yogurt filling... this is paradise!

The end result

Soft and flavorful! The contrast of flavors and textures is just amazing, the cookie dough bites on top are just divine... the protein filling with the churro base works perfectly, such a great snack, protein dessert to enjoy any time of the year or any time of the day.


Chewy and creamy! The keto cookie dough bring up that amazing crunch factor too that makes these even more satisfying. My boyfriend loved these protein bars, they didn't even know these were low carb and healthy!



You might want to save this recipe because a second batch might be needed here! I shared some of the pops with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to make some more.

Pro tip: You can also drizzle some melted chocolate to make them even prettier and tastier!

Churro Cookie Dough Protein Pies

Serves 17 servings


Ingredients

Base

  • 1 bag of Siete Foods Cinnamon Crisps*

  • 1 tsp of baking powder

  • 3/4 cup of egg whites

Filling

  • 1 + 1/2 cup of greek yogurt

  • 4 scoops of Marigold Creamy Vanilla Grass-Fed Whey Protein

Cookie Dough

  • 1 cup of Good Phats Keto Cookie Mix

  • 1/2 cup of cashew butter

  • 2 tbsp of water or nut milk

  • Keto Sprinkles for topping optional


Method

  1. Preheat the oven at 350F.

  2. Process or blend the cinnamon crisps until you get a fine flour.

  3. Mix with the baking powder and the egg whites.

  4. Pour the mix into 17 silicone muffin cups.

  5. Bake for 10 minutes.

  6. Mix the ingredients for the filling.

  7. Mix the cookie dough mix and prepare little balls.

  8. Top each pie with the greek yogurt mix and with cookie dough.

  9. Freeze a few hours or overnight and enjoy!

*You can also use 1 cup of almond flour.
