Cinnamon Cornbread Blondies

Serves 9


Ingredients

Base

  • 1 cup of all purpose gluten-free flour

  • 1 cup of cornmeal

  • 1 tsp of baking powder

  • 1 tsp of cinnamon powder

  • 1/2 cup of granulated monk fruit

  • 2 tsp of vanilla extract

  • 1/3 cup of ghee (room temperature)

  • 1/2 cup of Wallaby's Whole Milk Aussie Style Greek Yogurt

  • 2 organic whole eggs

  • 3/4 cup of 2% organic milk

  • 1/2 cup of drained corn

Sugar-Free

  • 1 cup of powdered monk fruit

  • 3 tbsp of 2% organic milk


Instructions

  1. Preheat the oven at 350F.

  2. Mix the dry ingredients for the blondies.

  3. Add the wet ingredients (except for the corn) and mix until fully incorporated.

  4. Transfer the batter into an 8x8 baking dish.

  5. Top most of the corn, leave for for the end.

  6. Bake for 35-38 minutes.

  7. Mix the ingredients for the glaze.

  8. Once the blondies are baked and cooled top them with glaze and leftover corn.

  9. Slice into 9 pieces and enjoy!
