If I had to pick between waffles or pancakes I would probably pick waffles. Even though I have great memories growing up, when my dad made Mickey pancakes. But the truth is that waffles are for some reason more fun. Maybe the crispier dough? Well, if you are like me, then this recipe is also for you!
Two of my latest obsessions! Pears and waffles together. The dream team!
Since I got my waffle maker I have been eating waffles in different ways and trying new doughs. A few days ago I shared this Paleo Chai Waffles, which are also amazing and great for the season! But now I wanted something with ricotta cheese.
Taking advantage of the season!
This is why I have been loving juicy pear, they are so tasty, naturally sweet and they provide micronutrients along some fiber. Combined with this ricotta waffle dough along with some cinnamon these are just PEAR-fect!
For this recipe we are only using FIVE INGREDIENTS! Making this recipe a great go to and actually great for meal prep! The best part is also that you only need your blender. That's it, you just need to blend all the ingredients and pour the mix into your waffle maker.
Simple, minimal ingredients!
Ricotta cheese
Almond Flour
Eggs
Cinnamon
Granulated monk fruit (PURELYHL for discount)
Baking powder
Pears
As you can see, this recipe is pretty basic and if you are planning a fall brunch this might be a great addition! We all enjoy some sweets, specially when they are low carb! Per waffle there's only 2.2 total carbs.

The easier waffles EVER!
Add all the ingredients into a blender and mix well, approximately 20 seconds.
Pour about 1/3 cup of the mix into a mini waffle maker and cook for 4 minutes.
Serve with keto maple syrup, slices pears and ricotta cheese.
Meal prep friendly breakfast!
This recipe is great, since it's super easy to make and makes 9 waffles per batch! Also once they cooled down I froze them inside a plastic container and reheat them a few seconds in the toaster oven, microwave or even in the air fryer!

Cinnamon Pear Ricotta Waffles

Ingredients
Base
2 cups (200g) of ricotta cheese
1/2 cup of almond Flour
4 eggs
1 tsp of cinnamon
1 tsp of baking powder
Toppings
1/4 (30g) of ricotta cheese
1 piece of a pear
Method
Add all the ingredients into a blender and mix well, approximately 20 seconds.
Pour about 1/3 cup of the mix into a mini waffle maker and cook for 4 minutes.
Serve with keto maple syrup, slices pears and ricotta cheese.
