Coconut Cookies with Cherry Pink Drizzle

Serves 24 (per batch)
Ingredients
Cookies:
2 cups of Dilettoso Pancake Mix (Vava Vanilla & Choc O Lotta)
3/4 cup of butter, room temperature
1 tsp of vanilla extract
1 whole egg
1/2 tsp of baking powder
1/2 tsp of baking soda
⅛ tsp of sea salt
1/2 cup of shredded coconut
1/2 cup of chopped Luxarado Maraschino cherries
1/2 cup of chopped pecans
Glaze:
1 cup of powdered monk fruit
2 tbsp of milk
2 tbsp of Luxarado maraschino cherries juice (from the jar)
1 tsp of vanilla extract
Garnish:
Pink sugar
Instructions
Preheat the oven to 350°F.
In a large mixing bowl, combine the dry ingredients for the cookies.
Add the softened butter, egg, and vanilla extract to the bowl. Mix well until all the ingredients form a consistent cookie dough.
Chop the Luxarado Maraschino cherries and pecans. Fold these into the cookie dough along with the shredded coconut.
Form the dough into 24 cookie balls and place them on a baking tray.
Chill the tray in the refrigerator for about 10 minutes.
Bake in the preheated oven for approximately 11 minutes, or until golden brown.
For the glaze, mix the powdered monk fruit, milk, cherry juice, and vanilla extract. Once the cookies are baked and cooled, drizzle the glaze over the cookies and sprinkle with pink sugar. Enjoy!.
