One of the best parts of this recipe is that it's made with simple ingredients and it just takes a few steps to make! Using my favorite ingredients; My current obsession, Ube extract, some coconut milk powder and of course, oatmeal.

We are showing some love to all my oatmeal and ube enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding sugar-free ube extract and a touch of coconut milk, Nuzest Vanilla Pea Protein, and also, some greek yogurt.

Keeping it extra delicious, healthy and just epic by using some ube extract for the pretty pop of color, and to make it even healthier we are using RxSugar alullose as our sweetener along with some coconut milk powder to create the magic and difference on this recipe and for extra protein I added a scoop of Nuzest Vanilla Pea Protein (PURELYHL for discount). A great healthy recipe without sacrificing great taste!

The base is made with simple ingredients, some rolled oats, ube extract, vanilla extract, Nuzest Vanilla Pea Protein (PURELYHL for discount) and to keep things sweet some RxSugar alullose. The perfect texture for this french toast casserole.
Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using abullone or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Okay, from now on it will be hard for me to eat oatmeal another way! These are super easy to make and just super yummy, plus good for you. I have been trying to increase some antioxidants in my diet so the coconut here hits the spot for that amazing color and nourishment.

Coconut Milk Ube Protein Oatmeal

Serves 1 serving
Ingredients
1/2 cup of rolled oats
1cup ofunsweetened almond milk
2 tbsp of coconut milk powder
1 scoop of Nuzest Vanilla Pea Protein (PURELYHL for discount)
1 tsp of ube extract
1 tsp of vanilla extract
3 tbsp of RxSugar alullose
Toppings
1/2 cup of vanilla greek yogurt
1 tbsp of unsweetened shredded coconut
Instructions
Mix all the ingredients for the oats and microwave for 2:30 minutes.
Stir and cook again for 1 minute taking care it doesn’t pour over the bowl.
Stir and let it cool. Serve in a small jar or bowl.
Top with yogurt and berries, enjoy!
