These are my iconic Coconut Raspberry Bundt Cakes, these are just a simple and epic combo that you need to make to satisfy that sweet tooth, in a delicious and healthy way... this is not your regular cake... this is made with healthier ingredients, all vegan while also being gluten-free.



About these Coconut Raspberry Bundt Cakes:

This recipe overall is gluten-free, low sugar and vegan as well. I used the cashew butter and coconut butter from Artisana Organics to create some magic along with some raspberries, and don't worry about bundt cake molds... I used my donut molds and these turned out the perfect single serve size!


These vegan and gluten-free bundt cakes are perfect to make no matter the year and to soak into your milk. The recipe it's easy to make and extremely delicious! It's an unmissable recipe that everyone will love and will also nourish your body... dairy-free and of course also a great source of antioxidants and healthy fats.

Coconut Raspberry Bundt Cakes

Serves 9 cakes


Ingredients

  • 1 1/2 cup of almond flour

  • 1 tsp of baking soda

  • 3/4 cup of granulated monk fruit

  • 1 tsp of vanilla extract

  • 1 banana (heated in the microwave for 1 minute)

  • 1/4 cup of 1/2 cup of Artisana Organics Cashew Butter

  • 1 cup of unsweetened almond milk

  • 3/4 cup of frozen raspberries

Topping

Method

  1. Preheat the oven at 350F.

  2. Mix all the ingredients dry ingredients for the cakes and then incorporate the rest of the ingredients.

  3. Transfer the dough into 9 silicone donut molds and bake for 24 minutes.

  4. Let them cool down once baked and drizzle coconut butter on top.

  5. Enjoy!
