We can't never get it wrong when it comes to coconut, it goes with so many things and blends with the season, in this occasion we are keeping it zesty and sweet with the touch of lemon and some fiber used for this recipe.

Lemon desserts have always been one of my favorite to make and eat, from key limes pies to lemon breads. And in this occasion we are stepping the lemon coconut game with these bars. Also vegan, low carb and gluten free.

Coconut Strawberry Lime Bars

Serves 9 servings
Ingredients
2 tsp of Daily Multi Fiber
4 scoops of Vanilla Pea Protein
1/2 cup of coconut flour
1/2 cup of coconut butter
1 + 1/2 cup of almond or coconut milk (hot)
Top Layer:
1 cup of frozen strawberries
1/2 cup of hot almond milk
1/2 cup of melted coconut butter
1/2 cup of shredded coconut
1 lime
Method
Mix all the ingredients for the base. Make sure to add the hot nut milk so the coconut butter doesn’t get solid. Press the dough into a 8x8 silicone baking dish.
Blend the strawberries, almond milk well. Add the coconut butter, (be sure that the strawberry mix is warm too). Pour the mix on top of the base.
Top with shredded coconut. Freeze for 4 hours or overnight.
Cut into 9 pieces and enjoy!
