There's something about cookies and cream that instantly makes my tastebuds jump, anyone else or just me? Well, these protein cake are perfect no matter the time of the year, these are gluten free, low carb and extremely easy to make.


For this recipe I’m using amazing and fun ingredients such as greek yogurt, keto friendly chocolate and white chocolate chips, low carb chocolate cookies and cream cheese. A great protein snack to fuel your body. Delicious, keto friendly and gluten free protein no bake cake bars!



About this Coffee Cookies & Cream Crepe Cake:

We are showing some love to all my cookies and cream... so underrated sometimes! But with that I also wanted to include a twist, a healthy and still delicious twist by just adding some greek yogurt to the mix and using almond flour tortillas as our easy peasy base, that I will add that thickness factor while keeping things low carb and delicious!


This recipe is easy, quick and nutrient dense... also so fun!


Key Ingredients:

Adding some protein powder for extra creaminess and a satisfying filling. I have been also obsessed with the combination of cream cheese and greek yogurt, such a great way to add volume without too many calories, overall, the ingredients are simple, low carb and gluten free... plus the taste is just delicious.



Chocolate and white cholate chips and a delicious cream cheese filling, the dream team! These are simply perfect for meal prep, no need to bake anything at all to enjoy and attack that sweet tooth at any moment. While keeping your body strong and fueled with all the amino acids of antioxidants from the protein blend we are using.


The base of this crepe cake:

The base is made with simple ingredients, almond flour tortillas, greek yogurt for those probiotics, some cream cheese and alullose. This combination keep things fluffy, low carb, gluten free and flavorful. And of course, white and dark chocolate chips for that cookies and cream effect.

The end result

Soft and flavorful! The contrast of flavors and extremely creamy is just amazing, the cookies here makes the greek yogurt bars extra thick, soft and chewy! The flavor of the chocolate chips is there and the texture of the cookies is just the best topping ever.


Melts in your mouth! It's soft and chewy, the greek yogurt with the cream cheese is just a divine combination, plus the chocolate chips and cookies as topping is key to the flavor and fun of this recipe, just take these to the next level, makes them even harder to resist.



You might want to save this recipe because a second recipe might be needed here! I shared some of the pops with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to make some more.

Coffee Cookies & Cream Crepe Cake Bars

Serves 6 servings


Ingredients

  • 4 almond flour tortillas

  • 1 cup of greek yogurt

  • 1 block of cream cheese room temperature

  • 1/3 cup of alullose

  • 2 tbsp of low carb chocolate chips

  • 2 tbsp of low carb white chocolate chips

  • 5 low carb chocolate cookies



Method

  1. Place 2 tortillas in the bottom of one silicone loaf dish.

  2. Mix the cream cheese, alullose, greek yogurt and instant coffee.

  3. Pour half of the mix over the first tortilla layer and add half of both chocolate chips.

  4. Top with another tortilla layer and with the coffee mix and rest of chocolate chips and cookies.

  5. Freeze overnight, cut into 6 pieces and enjoy!

Fiber: 2.7g

Net Carbs: 12g (just minus fiber)
