About these Cold Brew Mocha French Toast Cups:

Using cold brew and chocolate collagen along with some chocolate chips, that's I am all about with this recipe. Paired with some monk fruit and fruit just creates a great flavor, it's just a fun experience, simple but kind of gourmet.



The mix of the french toast is made from egg whites, vanilla extract, cold brew and that chocolate collagen as mentioned earlier... in a french toast cup! You can expect this to be extra fluffy with the great consistency that combined with the egg is perfect.



Another factor or nutrient density and flavor are the grass fed collagen! A very simple and nutrient dense recipe, packed with all the factors that me, as a nutritionist, consider the perfect formula; fiber, antioxidants from the chocolate and cold brew, protein and healthy fats.

About the low carb bread!

I used egg whites and skipped the yolk to make these extra fluffy! You can even add some collagen powder to add some gut health too! For the bread I recommend using Carbonaut or California Country Gal.


These are a great low carb option, for gluten free and keto option I love California Country Gal and for vegan, high fiber and low carb option, Carbonaut is great!



Toast or air fry the bread before pouring the mix. This helps with the final consistency and to avoid the bread from crumbling all about during the baking process. It adds a great addition of density too!

Cold Brew Mocha French Toast Cups

Serves 12 servings


Ingredients


Method

  1. Preheat the oven at 350F.

  2. Chop the bread into little cubes and air fry them for 5-8 minutes or toast them.

  3. Mix all the egg whites, monk fruit, vanilla extract and cold brew in a bowl.

  4. Place the bread into twelve silicone muffin cups and pour 1/4 cup of the cold brew mix on top.

  5. Top with chocolate chips and fat bombs.

  6. Bake for 18-20 minutes, let it cool down and enjoy!
