Cookie Butter Birthday Cake Fudge Bars (Low Carb & High Protein)

We all love a good classic, right? Well, I grew up eating cookies for breakfast and dinner, no joke and now as a nutritionist I love having my healthy options that still taste as good or even better... for this recipe I grabbed my ingredients from Bubble (they rock), this place has everything and beyond for all our foodies that also like to take care of their bodies.


For this recipe I used EVERYTHING COOKIES! Well, I used these Mummly Low Carb Cookies in Sweet Almond that are made with simple ingredients and they are low in net carbs (4 net carbs per serving) and this Laka Living Cookie Drip, made with cashews and a touch of adaptogens... these all taste absolutely amazing.

So the base of these pies is made by Laka Living Cookie Drip found at Bubble, made with just three organic ingredients and with way less sugar than the conventional options. I also added some sweet almond keto cookies on top just because these cookies are amazing, add a great texture, flavor and look!

I kept it very simple. I just mixed some greek yogurt, dye- free sprinkles, the cookie butter drip and keto cookies. You can find everything at Bubble (I'm seriously obsessed). And for the filling of course we are using some of their products and for the toppings cookies (because why not?) and more dye-free sprinkles.



One of the best parts of this recipe is that it's just super easy to make, basically fail proof and with simple ingredients; no refined sugars, flours or oils. Toppings

  • More dye-free sprinkles (used Super Fat)

  • 3 Mummly Low Carb Cookies in Sweet Almond

Method

  1. Mix all the ingredients for the base.

  2. Transfer to a silicone 8x8 dish.

  3. Add your toppings.

  4. Freeze overnight, cut into 9 pieces and enjoy!
