One of the best parts of this recipe is that it's made with simple ingredients and it just takes a few steps to make! Using my favorite ingredients; My current obsession, these super versatile flatbreads from Atoria's Family Bakery with only 60 kcals each.

We are showing some love to all my ice cream, and cookies & cream enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the cottage cheese and a flat breads, the perfect easy recipe for this summer!
Key Ingredients:
Keeping it extra delicious, healthy and just epic by using some some flatbreads to keep this extra easy, and to make it even healthier we are using RxSugar alullose as our sweetener, some cottage cheese and of course some of this fantastic sugar-free sandwich cookies AKA "oreos". A great healthy recipe without sacrificing great taste!
You won't see flatbreads another way from now on! This is simply perfect for meal prep since they just require a few ingredients as well as minimal steps to make these little loaves, also ready yo attack that sweet tooth at any moment.
The base of this Cookies & Cream Ice Cream Ice-Box:
The base is made with simple ingredients, some sugar free cookies and cream chocolate bar (Gatsby) and zero sugar "oreos", cottage cheese and to keep things sweet some RxSugar alullose, and for the bread I have been loving these flatbreads from Atoria's Family Bakery. The perfect texture for the ice cream cookies and cream filling.
Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using abullone or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Okay, from now on it will be hard for me to eat flatbreads another way! This is super easy to make and just super yummy, plus good for you. I have been trying to increase my protein so these are just the perfect snack, dessert or post workout.

Cookies & Cream Ice Cream Ice-Box

Serves 4 thick bars
Ingredients
2 flatbreads (used Atoria's Family Bakery)
Ice Cream Filling
1 cup of cottage cheese
1/3 cup of unsweetened almond milk
1 tsp of vanilla extract
1/3 cup of RxSugar alullose
1 crushed sugar-free cookies and cream chocolate bar (used Gatsby)
2 crushed sugar-free sandwich cookies (used Sundays)
Method
Place one flatbread in a silicone loaf dish.
Blend all the ingredients for the ice cream mix except for the cookies and chocolate.
Add a layer of the ice cream mix on top of the flatbread, top with the second flatbread.
Top with leftover ingredients and freeze for a couple of hours.
Slice into 4 pieces and enjoy!
