Cornbread Pancakes with Caramel Glaze

Serves 2 (6 pancakes)
Ingredients
1/2 cup of gluten-free flour
1/2 cup of organic cornmeal flour
1 tsp of cinnamon
1 tsp of baking powder
1/2 of RxSugar alullose (MARIA20 for discount)
1 whole egg
1/2 tsp of butter flavor drops
1 tsp of vanilla extract
2 tbsp of organic whipping cream
1/2 cup of organic light milk
1 tbsp of apple cider vinegar
Sugar-Free Caramel Glaze
1/2 cup of powdered monk fruit
2-3 tbsp of sugar-free coffee caramel
Toppings
1/2 cup of drained canned corn
Instructions
Mix the milk with apple cider vinegar and let it sit for 5-10 minutes.
Mix the dry ingredients for the pancakes, then incorporate the rest of the ingredients, stir without over mixing.
Cook on a pancake griddle for 3-4 minutes or on a skillet for 1-2 minutes per side in medium low heat.
Mix the ingredients for the glaze.
Serve with toppings and enjoy!
