I think cheesecakes and brownies are two of my favorite desserts, they are just so hard to resist, don't you think? Well, and cookies too!... so in this occasion I'm adding cookie to the formula! An epic brookie (cookie + brownie) in a cheesecake!


This is not the usual cheese, the inspiration and the idea is there but this is just another level. I'm focusing on my specialty, creative ways to make healthy foods tasty, you are going to love this version using keto Salivation SnackFoods Keto Dark Chocolate Brownie and Super Fat Cookies as our toppings in these cheesecake bars.

This recipe is super easy to make, creamy and such a simple recipe to make with just a few steps and that you can enjoy without failing. These are great to prepare a part of your sweet meal prep that will help you stay on track on your healthy lifestyle.


We are keeping it gluten free and keto, these even have only 171 calories per bar and only 5.4 net carbs per serving. We are using Salivation SnackFoods Keto Dark Chocolate Brownie and Keto cookies, the ones I like are from Super Fat. Both are amazing keto snack brands!



Adding some coconut flour for extra creaminess and a satisfying feeling. This is an old trick that I like to incorporate into my recipes to add volume, taste and some extra nutrients, such as fiber and also to keep things lower in net carbs.



Cookies, the crunch factor! I just can't keep a recipe basic. I like to add MY factor and in this occasion I wanted to add some keto cookies, for the win, taste and crunch! You are simply love the combination of textures.


The Base of this Keto Cheesecake:

For the base of this cheesecake I used coconut flour and a combination of almond flour, along with some eggs, alullose and some cinnamon. You can see that it's actually super easy and simple to make!

Cosmic Brookie Cheesecake Bars

Serves 9 servings


Ingredients

Base

  • 1 cup of almond flour

  • 1/2 cup of coconut flour

  • 1 tsp of cinnamon

  • 1 tsp of baking powder

  • 1/2 cup of granulated monk fruit

  • 2 eggs

  • 1/2 cup of water

Cheesecake Filling

Topping



Method

  1. Preheat the oven at 350F.

  2. Mix the dry ingredients for the base and then add the wet ingredients.

  3. Transfer the batter into a silicone 8x8 baking dish and bake for 15-18 minutes.

  4. Let it cool down.

  5. Blend the cream cheese (make sure it's room temperature) with vanilla and granulated monk fruit until smooth.

  6. Add the cream cheese on top of the baked base.

  7. Top with keto brownie and cookies, add some sprinkles.

  8. Cut into 9 pieces and enjoy!
