Cosmic Peanut Butter Banana Bread

Serves 6-8 pieces
Ingredients
1 cup of oat flour
1/4 cup of cacao powder
4 scoops of Marigold Peanut Butter Collagen peanut butter collagen
1/4 tsp of baking powder
2/3 of granulated monk fruit
2 eggs
2 bananas
1/4 cup of sugar free chocolate chips
2 tsp of vanilla extract
2 tbsp of freeze dried strawberries
1/2 cup of vanilla greek yogurt
Toppings
3/4 cup of vanilla greek yogurt
3 tbsp of cacao powder
3 tbsp of chocolate rainbow sprinkles
Instructions
Preheat the oven at 350F.
Mix all dry ingredients in a bowl.
Place the bananas in a bowl and microwave for 1:30 minutes.
Add the eggs, vanilla extract, bananas and mix well with the dry ingredients.
Add in the chocolate chips.
Transfer the batter into a silicone loaf baking dish.
Bake for 42-45 minutes and let it cool down.
Mix the greek yogurt with cacao powder and top the cooled banana bread with it.
Add the sprinkles
Slice and enjoy!
