We are showing some love to all my dessert bread pudding and goat cheese enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the cranberries, goat cheese and pomegranate, and also, Canyon Bakehouse English Muffins.

Keeping it extra delicious, healthy and just epic by using some goat cheese, and to make it even healthier we are using RxSugar alullose as our sweetener and of course some of these fantastic Canyon Bakehouse Gluten-Free Bread. A great healthy recipe without sacrificing great taste!

The base is made with simple ingredients, some cranberries and to keep things sweet some RxSugar alullose, and for the bread I have been loving these Canyon Bakehouse Gluten-Free Bread. The perfect flavors for this gourmet bread pudding.
Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using abullone or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Okay, from now on it will be hard for me to eat bread pudding another way! These are super easy to make and just super yummy, plus good for you. I have been loving single serving desserts, I have been enjoying if as my post-workout too.

Cranberry Goat Cheese Bread Pudding

Serves 1 serving
Ingredients
1 piece Canyon Bakehouse Gluten-Free English Muffins
1/3 cup of unsweetened almond milk
1/3 cup of egg whites
1 tsp of vanilla extract
3 tbsp of alullose
1 tbsp of goat cheese
1/4 cup of cranberries (fresh or frozen)
1/4 cup of pomegranate arils
Instructions
Preheat the oven at 350F.
Mix the unsweetened almond milk with egg whites, vanilla, and alullose.
Cut the bread into pieces, and place it in a bowl.
Add the rest of the ingredients and incorporate well.
Transfer into a small baking dish and top with cranberries, pomegranate arils and cheese.
Bake for 15 minutes.
Let cool down and enjoy!
