Cranberry Lemon Mini Tarts

Serves 4 tarts


Ingredients

  • For the Tarts:

    • 1 cup gluten-free puff pastry sheet (used Sweet Loren's)

    • 1 egg (for egg wash)

  • For the Filling:

  • For the Frosting:

    • ¼ cup fresh cranberries

    • 2 tbsp caramelized orange peel

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

  2. Prepare the Puff Pastry: Roll out the gluten-free puff pastry. Cut three different circles: one large, one medium, and from the medium circle, cut a smaller circle to create a ring.

  3. Assemble the Tarts: Place the ring pastry over the larger circle, and set the smaller circle aside as it will not be used.

  4. Egg Wash: Brush the egg wash over the pastry and bake for 15 minutes or until golden brown.
