As I mentioned earlier, feta cheese, lettuce, pear, walnuts, pistachios, cranberries and of course, a veggie burger, used Actual Veggies in Mushroom Mozzarella, a recipe that's super versatile and made with just simple ingredients, perfect for your lunch or dinner recipes, this one for sure!

Cranberry Walnut Pistachio Loaded Salad

Serves 2


Ingredients

  • 2 Actual Veggies Mushroom Mozzarella Veggie Burgers

  • 2 cups of chopped lettuce

  • 1 cup of spinach

  • 1 sliced pear

Cranberry Dressing

  • 1/2 tsp of sea salt

  • 1 tsp of garlic

  • 2/3 cup of greek yogurt

  • 2 tbsp of cranberry juice

  • 1/2 tbsp of Kosterina Walnut Balsamic Vinegar (this link will give you 15% off your order!)

Toppings

  • 1/4 cup of crushed walnuts

  • 2 tbsp of crushed pistachios

  • 1/3 cup of dried cranberries

  • 2 tbsp of feta cheese


Instructions

  1. Preheat the oven at 350F.

  2. Place your Actual Veggie burger on a baking tray or your air fryer basket.

  3. Air fry for 15 minutes at 365F. Or bake 20 minutes at 350F.

  4. Mix the ingredients for the dressing and set aside.

  5. Wash and slice the pear. Wash and drain the lettuce, chop it.

  6. Serve the leafy greens on a plate and top with your veggie burger, pear and toppings.

  7. Drizzle cranberry dressing and enjoy!
