A delicious, easy and comforting recipe you need to try ASAP! One of the best parts of this recipe is that it's simple, wholesome and perfect for meal preps. I made one of this enchilada casserole and saved it in the fridge... although I didn't last long. But definitely a recipe that I made x2 for my boyfriend.

Enchiladas are one of my favorite comfort foods ever, and one of my favorite recipes to share and cook for my loved ones and these are also special for different reasons, I'm using White Flour Tortillas from Maria and Ricardo's instead of corn tortillas and it's a game changer!
These tortillas were perfect for this recipe since they don't have any artificial preservatives and they are made with organic ingredients... and for this recipe they don't fall apart to it's so easy to stuff them and roll them.

The key ingredient on any enchilada recipe is of course, tortillas! And I know that corn tortillas are the ones we usually use but I'm here to tell you that using White Flour Tortillas from Maria and Ricardo's, is a game changer!

Jalapeño, cream and tortillas, the dream team! These enchiladas have just the perfect amount of spice... it hits the sweet spot but if you feel adventurous you can add one more jalapeño!

The base is made with simple ingredients, just half cream, roasted jalapeños, onion and garlic cloves, we are also including some bone broth to help on the creaminess and it will also add some amino acids for a healthier gut barrier.

Comforting and flavorful! The contrast of flavors is just amazing; the creamy jalapeño cream that has just the right amount of spice along with the chicken and white flour tortillas! Such a great twist from the classic enchiladas made from corn tortillas.
Using white flour tortillas really amps up the comfort factor in this recipe making them even creamier and soft to bite. I really liked the fact that I didn't need to toast the tortillas before stuffing them, I simply put them in the microwave and done, they didn't fall apart either.
So a consider this a fail proof recipe too!
You might want to save this recipe because a second batch might be needed here! I shared some of the pops with my friends but they were just too good as my meal after crossfit or dinner that I had to make some more.

Creamy Jalapeño Chicken Enchiladas

Serves 6 servings
Ingredients
6 White Flour Tortillas from Maria and Ricardo's
1 cup of half cream
1/4 cup of bone broth
3 jalapeños
1/4 white onion
3 garlic cloves
1 tsp of pink salt
1/2 tsp of black pepper
1/2 cup of shredded cheese
2 shredded cooked chicken breast
Method
Preheat the oven at 350F.
Roast for 20 minutes the jalapeños without the seeds, onion and garlic.
In a blender add the cream, roasted vegetables, bone broth and seasonings.
In a bowl with the chicken add 1/4 cup of the jalapeño cream and mix well.
Heat the tortillas in the microwave for 30 seconds and stuff them with part of the chicken.
Roll them and place them in an 8x8 baking dish.
Repeat this step with the leftover chicken and tortillas.
Pour the jalapeño cream on top and add the shredded cheese.
Bake for 25 minutes.
Serve and enjoy!
