Okay, so one of the chiles that are a staple in every Mexican house is jalapeño and I think it's also one of the most popular chiles around the world. The ideas for its use are endless; salsa, margaritas, jalapeño poppers, pickled, on nachos... well, the list goes on!
And growing up, I wasn't a fan. In fact I repelled it as much as possible because I couldn't take the spice but over the years my tolerance for chile got better and better. At the level of liking jalapeño and other interesting spicy chiles.
Of course, there are some people that are immune to the spice and they just basically shower themselves in all the sauce. That's not my case, I believe that food should be something we can enjoy instead of leaving out tastebuds numb from all the spice.
In occasion I had some of these basics in my fridge that I wanted to use, and for the double win to create a fun recipe for the blog! Creamy jalapeño chicken for the win, made in the air fryer (the obsession is so real).
Some of the ingredients:
Chicken Breast
Green Salsa
Pickled Jalapeño
Sea Salt
Black Pepper
Unsweetened Almond Milk
That's it! Super easy, and making it on the air fryer just takes things to the next level! A crispy but delicious meal. A good twist to the baked chicken, which is also good! But hey, gotta try new methods and things!
Tips on using the air fryer:
Preheat the air fryer.
There's no need to add oil (that's up to you)
Try with different timings
Don't be afraid to set up the heat a little bit higher.
I have been experimenting with my air fryer since I got it back in October of 2019, and the obsession is still so real. I really suggest you to invest in a good one because some friends don't like theirs but it's mostly because it's not a pretty good quality.

Method
Preheat your air fryer at 400F.

A simple, and pretty much automatic recipe. You just need to mix the ingredients and cook. Perfect for a week night dinner after a crazy and busy work when all you want is to not clean dishes and enjoy a perfectly comforting meal!
I really enjoyed this recipe with some roasted and fresh veggies to add more nutrient density and fiber!

Creamy Jalapeño Chicken

Serves 4
Ingredients
4 pieces of chicken breast
1 cup green salsa
1/4 cup of pickled jalapeño
1 tsp of sea salt
1/4 tsp of black pepper
1/4 cup unsweetened almond milk
Method
Preheat your air fryer at 400F.
Prepare the chicken add jalapeños salt and pepper.
Place it on an aluminum foil for a mess free recipe and to keep the juices in.
Mix the almond milk with green salsa and pour over chicken.
Cook the chicken with all the ingredients for 40 minutes.
Done and ready to serve!
