Death by Chocolate Pumpkin Bacon Cookies

Serves 6 large cookies


Ingredients

Cookies

  • 1 1/2 cups of gluten-free all purpose flour

  • 1 tsp of cinnamon powder

  • 1 tsp of baking soda

  • 1 tsp of baking powder

  • 1/2 cup of granulated monk fruit

  • 2 tsp of vanilla extract

  • 1/3 cup of almond butter

  • 1/2 cup of pumpkin puree

  • 3 slices of True Story Kurobuta Uncured Bacon

  • 3 tsp of black charcoal (or food coloring)

  • 1/4 cup of sugar-free chocolate chips

  • 1/4 cup of chopped pecans


Instructions

  1. Preheat the oven at 350F.

  2. Cook the bacon as desired, I air fried it for 12 minutes at 320F.

  3. Mix the dry ingredients for the cookies.

  4. Chop the bacon.

  5. Add the rest ingredients and mix until fully incorporated.

  6. Mix in part of the chocolate chips and pecans (leave some for topping).

  7. Create 6 large cookies and top with leftover chocolate chips and pecans.

  8. Bake for 11 minutes (for chewy inside!).

  9. Let them cool down and enjoy!
