Chocolate Cheesecake Brownie Loaf (Paleo & Keto)


Okay, this recipe had different transformations. The first attempt was a fail, but fail is not an option, plus I don't like waisting good ingredients. The key when it comes to recipe testing and not waisting recipes is to give it a twist and maybe add more ingredients.

To be honest this recipe was totally unexpected, it was intended to be a gift for a neighbor that has been so kind with us. There's nothing like a homemade baked good to show that we appreciate someone, don't you think? Or maybe that's my inner baker speaking.



Anyways, this recipe.. thankfully ended up being a great success and with great taste! The first attempt was with less eggs and without the cream cheese. These last two were a last minute addition to save this recipe. So probably I'm thankful for that little fail at the beginning because they definitely turned out way better!


Great enough to be a gift to this great neighbor. And yes, don't worry! We tried it and we also loved it. So it had a lot of approval comments.


This loaf is a step up to the usual loaf, instead a brownie twist with a drizzle of chocolate. Indulgent in a dairy free, paleo and keto way. Possible and epic.


For this recipe we are using simple ingredients.

  • Coconut flour

  • Eggs

  • Cacao

  • Almond Cream Cheese

  • Butter

  • Almond Butter

  • Low Carb Chocolate


For the almond cream cheese you can substitute for greek yogurt cream cheese or the usual cream cheese. That's totally up to your preference or what your body can tolerate. The taste is still amazing!


For the sweetener we are using granulated monk fruit. My favorite brand is from Lakanto, I always get the biggest bag from 3 lb because is my baking staple and the price is lower when I use PURELYHL. This code applies to all the Lakanto products.


Okay, so this recipe is fudgy, soft and perfect to match your latte. I think that nothings beats a good brownie with a glass of almond milk or coconut milk. Since these are loaded with fats and fiber from coconut flour these will keep you satisfy without all the sugar roller coaster.


And let's not forget, topping! In this case I added a drizzle of chocolate and almond butter. To make it more presentable and special since it was a gift. Plus we all love good looking baked goods! Specially when toppings are also wholesome based and simple!


And for this recipe would be using:

- Two bowls - Measuring cup

- Spoon for mix

- Baking loaf tin


You can also keep these in the refrigerator or freezer. Perfect for meal prep and to have a good snack or treat ready on hand. Great to share and bring to your grilling reunions, friend and family gatherings. Who could resist a cheesecake brownie?!

Double Chocolate Almond Butter Brownies

Serves 12

Ingredients

  • 1 cup of coconut flour

  • 1 tsp of baking powder

  • 2 tbsp of cacao powder

  • 1/2 tsp of cinnamon

  • 2 eggs

  • 8 oz. of almond cream cheese (or regular)

  • 1/4 cup of ghee

  • 1/2 cup of creamy almond butter

  • 1/4 cup of water or almond milk

  • 5 bars of dark chocolate (total of 150 grams)

Method

  1. Preheat the oven at 350F.

  2. In a mixing bowl add the dry ingredients and mix well.

  3. In another bowl melt the butter, and in another chocolate.

  4. In the bowl with the flour add egg, melted butter and almond butter. Mix again.

  5. Add 1/4 cup of the melted chocolate.

  6. Pour the dough into a loaf baking container.

  7. Bake 24 minutes.

  8. Let it cool. And once it's cool top with the rest of chocolate, and optional extra almond butter.
