Cookie lovers! Here's a super easy recipe for you to try this week... these were a hit with my family and crossfit friends! Hard to resist some chocolate action in a form of a cookie, don't you think?


Well, these cookie cups are also gluten free, keto friendly and they can be easily made vegan friendly. Feeds a crowd, perfect for meal preps and you can keep them in the freezer.






You can have fun with this recipe and choose one of your favorite healthy chocolate chips. In this occasions since I wanted to kept it plant-based and gluten free by choosing a chocolate one.

Double Chocolate Cookie Pudding Pies

Serves 12 servings


Ingredients

Cookies:

  • 1 container of Lakanto double chocolate cookie mix (PURELYHL for discount)

  • 1/4 cup of MCT oil

  • 1 + 1/4 cup of unsweetened almond milk

Pudding

  • 1 container of Simply Delish keto and vegan chocolate pudding (PURELYHL for discount)

  • 1 cup of greek yogurt

  • 1 + 1/4 cup of unsweetened almond milk

  • Irish Cream stevia drops

  • 1 Cookie Dough! Marigold chopped (PURELYHL for discount)

  • 1/4 cup of extra dark Evolved chocolate chips


Method

  1. Prepare the cookies as directed on the package. Place the dough into 12 silicone muffin cups and bake as directed.

  2. Mix the instant pudding with the ingredients, you can use your blender or hand mixer.

  3. Top each cooled cookie with pudding and add the chopped bars and chocolate chips.

  4. Enjoy!
