Oh well, hello there! I'm beyond excited to be sharing this amazing recipe that will knock your socks off, using one of my favorite ingredients in my Mexican sweets, dulce de leche and some bananas.
This recipe is also gluten free, low carb and easy to make! Healthy and indulgent the same time that you won't even tell these are that healthy and made with ingredients better for you.

Nothing beats a sweet and healthy alternative to some of our usual recipes, this is just a step up. Gluten free and low carb that creates this amazing blondie recipe. Hard to resist this creamy, thick and delicious blondie.
Simply made with basic ingredients; my favorite flour substitutes are almond, coconut and even plant based protein. In this occasion we are using a combination of coconut flour, almond flour and why not, some ground flaxseed to add some fiber.
This is simply a major combo that you cannot resist, hard to believe that this is also low carb! We are using some bananas, that will give that amazing thick effect and banana flavor, of course and some dulce de leche as our base.
The perfect afternoon snack, dessert or companion to your latte or tea, no matter if you are with a picky eater! This is a delicious, sweet, fun and nutrient dense fun recipe that might be on repeat all summer long!
For the dulce de leche effect or ingredient I used Milkconut, a Mexican brand that makes these amazing low carb dulce de leche that it is simply a dream! You can use a local brand or substitute for almond butter.

Banana
Coconut flour
Milkconut (or low carb caramel sauce)
Egg whites
Keto candied pecans (Used Marigold)
Unsweetened shredded coconut
Loaded with vitamins, minerals from the nut butter and fiber from the coconut flour this recipe is truly another level and seriously irresistible! You can even add some collagen powder to add some gut health too.
The topping was an addition of the granulated monk fruit and a drizzle of the dulce de leche, simply delicious!
To keep everything low carb I used my favorite sweetener that replace sugar 1:1, this is the granulated monk fruit from Lakanto, this is a great keto friendly and diabetic option for all my sweet pies out there.

Dulce de Leche Banana Blondies

Serves 12 servings
Ingredients
1 cup of banana coins
1 cup of coconut flour
1 cup of Milkconut (or low carb caramel sauce)
1/4 cup of egg whites
Toppings
2 oz of keto candied pecans (Used Marigold)
2 tbsp of unsweetened shredded coconut
Method
Preheat the oven at 350F.
Mix the dry ingredients and add the liquid after fully incorporated.
Pour the dough into a 8x8 silicone baking dish.
Spread the toppings.
Bake for 24-26 minutes.
Let it cool down, cut into 9 pieces.
