Prepare yourself to a super easy and delicious recipe! One of my top favorites of all times... green enchiladas! You know how much I love Mexican food and since this is also my birthday month I thought I might recreate a fun version of this classic.
This is a simple variation by using my air fryer instead of frying them in oil, and using Cali'flour flatbreads instead of tortillas. They have an extra cheesy taste and I'm loving it! Of course, traditional enchiladas will be forever in my heart and life.
This recipe is just perfect for everyone who would love to sneak in some veggies into their diets (hello cauliflower flatbreads), are trying to cut back on inflammatory foods such as gluten and vegetable oils and yet, still want to enjoy a delicious meal!
Traditional enchiladas are the bomb! They are delicious, but these ones are also amazing, trust me! Giving my personal touch with these cauliflower flatbreads from Cali'flour foods. My absolute favorites!
Instead of corn tortillas I decided to try using these gluten free and low carb flatbreads... you know to put them into test since I love them, as much as I love Mexican food.

Pretty amazing right? I told you you needed simple ingredients for this recipe! Probably you already have those ingredients in your house... well, green salsa maybe but you are going to find this in the salsa/sauce section of your grocery store, even in Costco! Tip: check there's no added oils or sugars!
Chicken Hacks!
For me it's easy to buy shredded chicken or to shredded rotisserie chicken. I usually have it in my freezer whenever there's a recipe or food emergency. Chicken will come and save the day whenever there's no sustainable canned tuna for those quick meals.
Air fried or oven baked! You decide.
If you follow me in Instagram you might know that I'm obsessed with my air fryer and I do everything in it. And since enchiladas as most commonly fried in oil I wanted to make my healthier twist by using my air fryer; they turned out nicely crispy!
If you don't have an air fryer you can baked them! Even better if you oven has the "roast", that's a great way to make sure you get them crispy! This is also why we add the salsa at the end, to prevent any soggy tortillas, or in this case, cauliflower flatbreads.
Gluten free and keto? No problem!
It's all about adjusting and finding the right recipes and ingredients so if you are on your gluten free or keto/low carb journey you are going to love this simple and amazing dinner.

Easiest Green Enchiladas

Serves 2
Ingredients
6 Cali'flour Foods Flatbreads (PURELYHL for discount)
1 cup of shredded chicken
1/2 cup of green salsa (I used Herdez)
2 tbsp of cotija cheese
Method
Preheat the air fryer or oven at 350F.
Place the unfrozen Cali'flour flatbreads in a flat surface and place some shredded chicken in the middle.
Roll each flatbread in order to get the enchilada form.
Place three of the enchiladas into the air fryer over aluminium paper (for oven place them all at the same time in a baking tray).
Air fry/bake them for 10 minutes.
Transfer them to a plate and top with green salsa, pico de gallo and cotija cheese.
