This recipe is super comforting and with a twist of a Mexican classic! Green enchiladas are my personal favorite but thinking on all the process it takes to make them made me rethink the method in other to still enjoy the delicious taste and comfort without taking that long in the process.


I decided to transform it into a casserole and as mentioned earlier, keeping it extra easy by using the right kitchen tools from Karibe:





A low carb, comforting and gluten free casserole, no gluten and high protein recipe. We are adding green salsa (of course!), some panels cheese, baked tostadas and some eggs into this recipe.


The key to a delicious green enchilada is a good salsa so I try to make my own (recipe to my green salsa HERE) and of course the touch of the baked tostadas along with the cheese. Who doesn't love a good comforting meal, right?



What's in this Easiest Tilapia Green Enchilada Casserole?

Well, besides the tilapia and green salsa we are adding some eggs and some cheese to keep things cheesy and nourishing too! Plus we are adding our seasonings as well along with some baked tostadas to make that tortilla addition enchiladas have.


Tilapia is great protein option to add into your lifestyle! As a nutritionist I know that healthy eating should be sustainable and convenient without sacrificing any taste. Tilapia is just a great source of protein, vitamin B12 that's is essential for healthy blood and red cells. Also naturally low in fat.

Okay, so what makes enchiladas what they are is the tortilla, but we are using tostadas to keep things easier, cheese and the salsa; it can be green or red.... this time we are going green!


Of course tilapia, the base of out green enchiladas and that also adds some vitamins, nutrients and protein. Enchiladas are typically made with chicken but fun fact; my mom used to make tuna enchiladas growing up so this is why I decided to go with tilapia instead of chicken.


And for spices, adding real salt, pepper and garlic really amps up any taste and aroma to the recipes; a must and another sneaky way to get some micronutrients such as minerals from the sea salt.

The end result

A cheesy and flavorful enchilada casserole for all my Mexican food lovers, super comforting. The touch of the cheese one top adds such a nice touch and flavor to the recipe... plus who doesn't love cheese, right?


I enjoyed mine for dinner or lunch, with some extra greens as a side and air fried onions... but you can also add some extra salsa as well and you will have such a great bite to enjoy... and healthy too!



Not boring or complicated! This are a great lunch for kids and grown ups. Pro tip: You can have them ready for meal preps in the freezer too!

Easiest Tilapia Green Enchilada Casserole

Serves 9 servings


Ingredients

  • 2 sustainably sourced tilapias

  • 1/2 cup of green salsa

  • 3 eggs

  • 3-4 baked tostadas

  • 1 cup of panela cheese (or mozzarella)

  • 1/2 tsp black pepper

  • 1 tsp of real salt

  • 1 tsp of garlic


Method

  1. Preheat the oven at 350F.

  2. Bake the tilapia with lime juice and seasonings to taste for 27 minutes.

  3. Transfer the baked tilapia into a mixing bowl and using your spatula shred the tilapia.

  4. Add green salsa, salt, black pepper, garlic and eggs and mix well.

  5. Incorporate the crushed tostadas and pour the mix into a greased 8x8 baking dish.

  6. Using your cheese knife cut the cheese into squares and top with casserole with it.

  7. Bake for 40-45 minutes.

  8. Let it cool down, cut into 9 pieces.

  9. Enjoy!
