Flaxseeds are great egg replacements, both work like a sort of glue.
For this recipe I did use eggs but feel free to make this fully vegan by using your favorite egg replacement, flaxseeds and chia seeds are great alternatives that will also add some zinc, magnesium and B vitamins.

Elderberry Pecan French Toast Bake

Serves 9
Ingredients
Topping
2 tbsp of coconut butter
Method
Preheat the your oven at 350F.
Cut into half inch squares the bread and bake for 12 minutes.
Mix the eggs, nut milk, alullose and elderberry.
Incorporate the bread to the mix and stir well.
Add the whole mix into a greased 8x8 baking dish.
Top with candied pecans and blueberries.
Bake for 35 minutes.
Let it cool down, cut into 9 slices.
