Enchiladas Suizas Casserole

Serves 2-3
Ingredients (Serves 8)
Suiza Sauce:
1 cup of whole milk
6 pieces of Laughing Cow cheese (or cream cheese)
1 whole pepper (marinated or roasted)
1 tsp of kosher salt
1 tsp of garlic
⅛ tsp of black pepper
1 tbsp of dried onion flakes
3 cups of Mi Niña Organic “Sea Salt” Tortilla Chips
2 cups of shredded chicken
½ cup of shredded mozzarella cheese
Toppings:
2 slices of cheddar cheese
¼ cup of chopped cilantro
1 tsp of red pepper flakes
Method
Preheat the oven to 350°F.
In a blender, combine all the ingredients for the Suiza sauce and blend for 20-30 seconds until smooth and creamy.
In a mixing bowl, combine the shredded chicken with half of the blended Suiza sauce, mixing well to coat.
To assemble the casserole, start by placing a dollop of the remaining sauce at the bottom of a baking dish. Add a layer of Mi Niña Tortilla Chips, followed by a layer of the chicken mixture and a sprinkle of mozzarella cheese.
Repeat the layering process once more, ensuring all ingredients are used.
Bake in the preheated oven for 30 minutes.
After baking, top with slices of cheddar cheese and return to the oven for an additional 30 seconds or until the cheese melts.
Finish with the remaining toppings: cilantro and red pepper flakes. Serve and enjoy your delicious creation!
