We are showing some love to all my cereal and Mexican rice pudding enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding corn flake cereal, raisins and evaporated milk and a touch of cinnamon.

Keeping it extra delicious, healthy and just epic by using some raisins for the pretty pop of color and nutrients, and to make it even healthier we are using RxSugar alullose as our sweetener, some evaporated milk, corn flake cereal, Nuzest Vegan Vanilla Protein (PURELYHL for discount), raisins, cinnamon. A great healthy recipe without sacrificing great taste!

The base is made with simple ingredients, some cinnamon, corn flake cereal, evaporated milk and to keep things sweet some RxSugar alullose, Nuzest Vegan Vanilla Protein (PURELYHL for discount), and of course, raisins, optional but I love them.
Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using alullose or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Coconut Whipping Cream
Method
Pour all the ingredients in a jar.
Cover with the lid and shake.
Let ir sit overnight or heat in the microwave for 1:30 minutes.
Top with whipping cream (optional) and enjoy!
