My relationship with eggplant is kind of love or hate, sometimes I just don't get it to have a good taste or cooking time but in this occasion I created this amazing fusion of flavors that will make you change your thoughts about eggplants being tasteless.

About these Everything Bagel BBQ Eggplant:
This is extremely easy to make and extremely flavorful! The ingredients are also super basic, I only used four main ingredients overall without considering the extra garlic, black pepper and real salt that I added.
For the BBQ sauce I simply used Good Food For Good Sauce that I got at Whole Foods in the condiment or refrigerated section. These sauces are delicious and my faves for quite a while now.
What I also love about this brand is that they feed a person for every purchase you make! And the ingredients are great; no sugar added, plant-based, keto and whole 30 friendly... just legit ingredients here!
What's in these Everything Bagel BBQ Eggplant?
As I mentioned earlier, I used a whole 30 and keto friendly BBQ sauce, eggplant of course, and everything bagel seasoning to add a little bit of crunch and flavor to these. I added some garlic and real salt to add even more flavor since eggplants can be very plain.
Eggplants are actually a very fun veggie to prepare! As a nutritionist I know that healthy eating should be sustainable and convenient without sacrificing any taste. This recipe is a great and encouraging recipe to try veggies in different ways, not only plain old and boring green salads!

The end result
These are fun, easy to make and very flavorful! I baked these and they turned out being very juicy with a crispy outside... besides the crunch from the everything bagel seasoning that also went so well with the BBQ sauce.
I enjoyed mine for dinner or lunch, alone and by the forkful! A recipe worth making again especially during summer season and all the BBQ gatherings... I can even tell you that mom approved this recipe and she is not a eggplant fan!
Not boring or complicated! This are a great lunch for kids and grown ups. Pro tip: You can air fry them for a few minutes for an extra crispy experience!

Everything Bagel BBQ Eggplant

Serves 8 servings
Ingredients
1 large eggplant
1/4 cup of Good Food For Good Sauce BBQ Sauce
2 tbsp of everything bagel seasoning
1/4 cup of buffalo hot sauce
1/8 tsp black pepper
1/8 tsp of real salt
1/8 tsp of garlic
Method
Preheat the oven at 350F.
Slice the eggplant in pieces of 1/2 inch and lay them out in a baking tray.
Mix the BBQ sauce, salt, garlic and black pepper using a cooking brush.
Brush each eggplant with the sauce, both sides.
Top them with the everything bagel seasoning.
Bake for 25 minutes.
