Express Caramel Protein Cake (Gluten Free & Keto)

If you like cakes but you are just not in the mood for turning on the oven, then this snack recipe is for you! A simple express cake that doesn't need your oven, we are using the microwave instead to keep things extra easier.


For this recipe I’m using egg whites, eggs and some vegan protein, cashew butter and all the goodness for this thick and delicious caramel cake? A great protein snack to fuel your body. Delicious, keto friendly and gluten free protein bake!



About this Express Caramel Protein Cake:

We are showing some love to egg whites and all the eggs... so underrated sometimes! But with that I also wanted to include a twist, a healthy and still delicious twist by just adding some Happy Way Whey Protein that I will add that creamy factor while keeping things low carb and delicious!


This recipe is easy, quick and nutrient dense... also so fun!


Key Ingredients:

Adding some protein powder for extra creaminess and a satisfying filling. I have been also obsessed with the Happy Way Chocolate Caramel Vegan Protein, the ingredients are simple, it even includes some maca and MCT in... plus the taste is just delicious, they even have a whey option.



Caramel and chocolate, the dream team! These are simply perfect for meal prep, no need to bake anything at all to enjoy and attack that sweet tooth at any moment. While keeping your body strong and fueled with all the amino acids of antioxidants from the protein blend we are using.


The base of these protein cake:

The base is made with simple ingredients, Happy Way Chocolate Caramel Protein, egg whites and an crushed granola to keep it nutrient dense and gluten free. The end result

Soft and flavorful! The contrast of flavors and extremely creamy is just amazing, this protein bake is so fluffy and I know that they are good because the pickiest eater even approved these (AKA my dad) these didn't last a day... and probably will be baked again.


Melts in your mouth! It's soft and fluffy, the cashew cream cheese mix on top is just a divine combination, plus the chocolate caramel protein is key to the flavor, just take these to the next level that makes them even harder to resist.



You might want to save this recipe because a second recipe might be needed here! I shared some of the pops with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to bake some more.

Pro tip: Pair these with a cozy latte... sharing is optional!

Express Caramel Protein Cake

Serves 4 servings


Ingredients

Base

  • 1/4 cup of low carb maple granola (granulated in the blender)

  • 2 scoops of Caramel Biscuit Vegan Protein (used Happy Way)

  • 1/2 cup of egg whites

  • 4 tbsp of Granulated Monk Fruit

Toppings

  • 4 oz. of cream cheese room temperature

  • 1/4 cup of cashew nut butter

  • 2 tbsp of monk fruit

  • 2 tbsp of Keto Coffee Creamer (used Super Coffee)

  • 1 tbsp of low carb chocolate chips


Method

  1. Mix all the ingredients of the base very well.

  2. Pour in two 5x5 baking dishes (I used Souper Cubes)

  3. Microwave each cake for 2 minutes.

  4. Mix the monk fruit, cream cheese, coffee creamer and cashew butter.

  5. Top each cake with the blend and add the chocolate chips.

Fat: 16.1g

Carbs: 21.4g

Fiber: 6.8g

Net Carbs: 14.6g

Protein: 23.2g
