Serves 3 tarts
Ingredients
For the Crust:
1 1/2 cups Vava Vanilla Dilettoso Mix
1/2 tsp of sea salt
1 tsp of garlic powder
1/8 tsp of black pepper
1/3 cup cold butter or coconut oil
2–4 tbsp ice-cold water
For the Filling:
2 whole eggs
1/4 tsp of garlic powder
1/4 tsp of sea salt
2 tbsp of chopped red onion
1/2 cup of sliced cherry tomatoes
1/2 cup crumbled feta cheese
Dried parsley for garnish
Instructions
Preheat the Oven: Preheat your oven to 375°F (190°C).
Prepare the Crust: In a bowl, combine the Vava Vanilla Dilettoso Mix, sea salt, black pepper, and garlic powder. Add the cold butter (or coconut oil) and mix until the mixture resembles coarse crumbs.
Form the Dough: Gradually add ice-cold water, one tablespoon at a time, until the dough forms a ball.
Roll Out the Dough: Roll out the dough on a floured surface and press it into a tart pan.
Pre-bake the Crust: Pre-bake the crust in the oven for 10 minutes.
Prepare the Filling: While the crust is baking, slice the cherry tomatoes and red onion. In a separate bowl, whisk together the eggs with the vegetables, and season with an additional sprinkle of salt and pepper. Set aside.
Combine and Bake: Once the crust is done pre-baking, remove it from the oven and pour the egg-feta mixture into the crust, distributing it evenly. Top with crumbled feta cheese.
Final Bake: Bake again until the filling is set and the top is golden, about 10 minutes. Alternatively, you can air fry them for 18 minutes at 300°F.
Serve and Enjoy: Once baked, remove from the oven, garnish with dried parsley, and serve warm.
