So my mom started eating low carbs while ago and she has been loving it, she is doing it for the health benefits overall and to prevent any health conditions in the future. This post is not about the ketogenic diet but about this low carb bread.
My mom always had a strong sweet tooth and she has been able to change that by this diet (It's one of the benefits), but from time to time she wants something sweet and it's totally human and valid! No person in this world should restrict that desire. We should always enjoy life and do what makes us happy and like we are a total badass (which we are!).
She has requested me to share some sweet treat recipes with her, and as I share a lot of low carb, paleo and keto friendly recipes here, today I wanted to focus on a SUPER BASIC and SUPER DELICIOUS recipe. No fails, anyone can make this recipe!
This bread is the perfect matcha for your morning coffee, latte or slathered with some ghee, butter or nut butter. My favorite at the moment is pili nut butter.
The main ingredient here is flaxseed, yes! You guessed it, so this recipe is loaded with fiber. The thing about flaxseed is that it contains both fibers: Soluble and insoluble. Plus a great dose of omega-3s. This is Brain Bread, without the gluten, milk, or sugar. Just the goods.
And for equipment you'll only need:
- Oven
- Mixing bowl
- Loaf baking dish
- Spoon to mix
As you can see it's super easy to make.
As for source of healthy fat I picked coconut oil but you can substitute it with:
- Ghee
- Butter
- Avocado oil
The choice is all yours! And for toppings feel free to add whatever you like, in this case I sprinkled some shredded coconut and some pili nuts. This just gives it the perfect crunchy topping.

Flaxseed Cinnamon Bread

Serves 12 slices
Ingredients
- 2 cups of ground flaxseed
- 4 eggs
- 1 tsp of baking powder
- 1/3 cup of monk fruit
- 1/2 Tbsp of ground cinnamon
- 1/2 cup of water or almond milk
- 1/3 cup of coconut oil
Method
1. Preheat your oven at 350F.
2. In a mixing bowl add the dry ingredients and mix.
3. Add the eggs, water and melted coconut oil.
4. Once the mix is nice and even pour it in a loaf baking dish greased with coconut oil.
5. Add your toppings.
6. Bake for 25 minutes.
7. Let it cool down and ENJOY!
