Oh, as donuts and brownies could get even getter I baked these amazing keto & paleo friendly donuts with an amazing touch of drum rolls... root beer! It's my first time trying a baked good or baking with root beer and guys, you gotta try these donuts!
The combination of chocolate and the rootbeer is just a dream and something I glad I tasted. These will be a hit, specially since the inspiration was the iconic root beer floats that why I needed to add a paleo and keto friendly vanilla frosting too!
About these Float Creamy Root-Beer Brownie Donuts:
These donuts and dense and fudgy, like a brownie, of course! Thanks to the chocolate used in this recipe. We are skipping the eggs in this recipe so if you know anything allergic to eggs bake these donuts for them. These are also keto and paleo!
The combination of healthy fats and fiber here is just the perfect combination for steady glucose levels! From the fats from the low carb chocolate here along with the fiber from coconut flour makes this recipe to keep those glucose levels nice and steady!
Oh yeah, no artificial ingredients or flavors! Some recipes include root beer flavor (artificial), but not here, in this case I used Zevia that uses ZERO artificial ingredients and it's sweetened with stevia. It really is mind-blowing, even my dad (a fussy eater) was impressed and approved it!
Overall, these are the ingredients needed for these Float Creamy Root-Beer Brownie Donuts:
Coconut flour
Zevia - Creamy Root Beer
MCT Oil (butter or coconut oil also works)
Dairy free melted chocolate (PURELYHL for discount)
Baking powder
As you can see, the ingredients are pretty basic. Minimal but they create an amazing recipe, a delicious fudgy and dense donut that you are going to love! From coconut flour, a great gluten free and low carb flour alternative to the MCT, one of my latest baking hack.
MCT stand to Medium Chain Triglycerides; a type of fat that gets absorbed quicker through our body and used as energy, that's the hype of it, specially of you are fasting and you need a little boost of energy from ketones. You can use butter or coconut oil too, it doesn't alter the flavor.
For the Vanilla Float Frosting:
Also a super easy blend that we are keeping low carb and gluten free! We are blending or processing some almonds with a touch of more of Zevia's Creamy Root Beer and granulated monk fruit. Simple and delicious.

The end result
These donuts are a whole new level. Easy to make and fudgy, like a brownie with a great touch of root beer natural taste. The frosting really amps up the flavor and contrast of the chocolate in the donuts.
I enjoyed these donuts alone or dipped into my almond milk or coconut latte. They were great as my afternoon snack or treat and you can keep them in the freezer and have them ready to devour at any moment!

Float Creamy Root-Beer Brownie Donuts

Serves 9 donuts
Ingredients
Donuts
1 cup of coconut flour
8 oz. of Zevia - Creamy Root Beer
1/4 cup of MCT (butter or coconut oil also works)
1 cup of dairy free melted chocolate (PURELYHL for discount)
1/3 cup of granulated monk fruit
1 tsp of baking powder
Vanilla Float Frosting
1 + 1/4 cup of almonds (soaked overnight)
3 tbsp of keto maple syrup (or honey)
1 tsp of vanilla
1/4 cup of Zevia - Creamy Root Beer
Method
Donuts
Preheat the oven at 370F.
Mix the dry ingredients for the donuts, mix well.
Add the melted chocolate with coconut oil and mix well.
Add the root beer and mix well.
Add the donut dough into 9 silicone donut molds.
Bake for 20 minutes.
Let it cool down.
Vanilla Float Frosting
Blend or process the soaked almonds with all the ingredients until you get a soft and creamy consistency.
Top donuts with the frosting and enjoy!
