Gingerbread Bagel Whoopie Pie

Ingredients

Gingerbread Filling

  • 3/4 cup of sugar-free vanilla Greek yogurt

  • 1 packet of sugar-free pudding mix

  • 1/2 tsp of ground cinnamon

  • 1/4 tsp of pumpkin spice

  • 1/2 tsp of ground ginger

  • 1/4 cup of unsweetened almond milk

  • 1 tsp of vanilla extract

  • 1 tbsp of molasses (optional)


Instructions

  1. Prepare the Bagels:

    • Slice the bagels in half and place them in your air fryer basket. Spray the tops with ghee spray.

    • Cook at 380°F for 4 minutes until they’re lightly toasted and warm.

  2. Mix the Filling:

    • In a bowl, mix together the sugar-free vanilla Greek yogurt, sugar-free pudding mix, ground cinnamon, pumpkin spice, ground ginger, unsweetened almond milk, vanilla extract, and molasses (if using) until well combined.

  3. Assemble the Whoopie Pies:

    • Take two half-bagels, spread a generous amount of the gingerbread filling on each half, and top them with the remaining bagel halves.
