I used TruWhip Vegan Whipped Topping, vegan yogurt (thick), vanilla extract, brown granulated monk fruit, gingerbread spice, cornstarch, pecans, homemade almond milk and vegan gingersnap cookies... hard to say no to this one!
This is just a great dessert to make anytime of the year but great for this holiday season! It's an unmissable recipe that everyone will love while being super easy to make and looks very elegant.

Gingerbread Cookie Vegan Pie

Serves 4 individual pies
Ingredients
Pie Mix
2 cups of TruWhip Vegan Whipped Topping
1 1/2 cup of coconut yogurt
1 tsp of vanilla extract
6 tbsp of cornstarch
1/2 cup of plant-based vanilla milk
1 tsp of gingerbread seasoning
4 mini vegan gingersnap cookies
Toppings
1 cup of TruWhip Vegan Whipped Topping
5 mini vegan gingersnap cookies
Pecans
Instructions
Preheat the oven at 350F.
Blend the ingredients for the pie.
Pour over a baking dish and bake for 35-40 minutes inside a larger dish half way full of water (bain-mary)
Let it cool down completely.
Add your toppings and enjoy!
