Greek Yogurt Fig Crumble Pie (Low Carb, High Protein)


If you are in the hunt for a simple, quick and delicious recipe you click on the right one! This recipe was made while multi-tasking and probably took me less than 10-15 minutes... no joke.


The reason and inspiration behind this recipe was nothing but the foods I had in my freezer and fridge. I was in desperate need to make some extra space for more food, plus I was being to rude by ignoring those frozen figs someone gifted to use past summer. PAST SUMMER, I know!


But they were completely fine since they were safe and sound in my freezer, don't worry, nobody got harmed after eating some slices of this frozen pie!

You only need you food processor or blender! That's right, you just need to try a bunch of delicious ingredients in your blender and pour. No oven, spoons, or bowls will be needed. Just two things.


- Blender or Food Processor

- A Dish to Pour the Mix


Some of the ingredients we are using are: greek yogurt, frozen figs, low carb granola or granola of choice, beef gelatin (optional but useful), and monk fruit as our keto-friendly and diabetic friendly sugar replacement. Use PURELYHL for discount!


Each serving of these bad boys have 7.7g grams of protein, depending weather you use beef gelatin or not, in the nutritional information below I didn't included it. The thing with beef gelatin and this recipe is to help on the consistency, since it can get very melty once you serve them, the functionality of it on this recipe is to help it stick together, like the name says... like gelatin!


Anyways, this recipe is figgin simple and delicious! A great way to use some figs and add some seasonal flavor. Plus the topping, oh man! Gotta go hard or go home! It makes this recipe extra flavorful and special, you can't see any white spaces, we got it all covered (wink wink!)


Now, this is why it's called crumble pie, because of the topping! I mean, the name and the pictures tell everything about this recipe! I'm so excited to share with you...

Greek Yogurt Fig Crumble Pie

Serves 8

Ingredients

- 1 + 1/2 cup (200g) of frozen figs

- 3 containers of greek yogurt

- 3 tbsp of granulated monk fruit (PURELYHL for discount)

- 1 tsp cinnamon

- 1 tbsp beef gelatin

- 3 low carb granola bars (crushed) or 2 cups low carb granola (PURELYHL for discount)

Method

1. Blend the greek yogurt, monk fruit, beef gelatin, cinnamon and figs well.

2. Pour the mix into a round container.

3. Process the granola bars and top the pie evenly.

4. Freeze for 2 hours.

5. ENJOY!
