Collagen Oatmeal Carrot Cake Cookies

Serves 14 cookies


Ingredients

  • 3/4 cup of Beth Blends Gluten-Free Flour (PURELYHL for discount)

  • 1 scoop of Happy Mammoth Complete Gut Repair Vanilla Bean Collagen

  • 1/2 cup of steel cup oats

  • 1 tsp of baking powder

  • 1 tsp of cinnamon

  • 1/2 tsp of ginger

  • 1/8 tsp of baking salt

  • 2/3 cup of chopped carrots

  • 1/2 cup of alullose

  • 2/3 cup of brown granulated monk fruit

  • 3/4 cup cashew butter

  • 1/3 cup of RxSugar Sugar-Free Maple Syrup (MARIA20 for discount)

  • 2 tsp of vanilla extract

  • 3 tbsp of raisins

  • 2 tbsp of sunflower seeds


Sugar-Free Glaze

  • 2/3 cup of powdered monk fruit

  • 1 tbsp of unsweetened almond milk


Instructions

  1. Preheat the oven at 350F.

  2. Mix all the dry ingredients for the cookies.

  3. Add the wet ingredients with the carrots and raisins, mix until fully incorporated.

  4. Create 14 cookies and place them on a baking tray.

  5. Bake for 11-12 minutes.

  6. Mix the ingredients for the glaze and top the cookies with it once baked.
