This recipe overall is gluten-free, low sugar and vegan friendly as well. I used some leftover jasmine rice, almond milk, vanilla extract, Equip Foods Grass-Fed Vanilla Protein (PURELYHL for discount) to create some magic along with some honeydew extract and blueberries.

Honeydew Blueberry Rice Pudding

Serves 1
Ingredients
Rice Pudding
2 cup of cooked jasmine rice
1 cup of unsweetened almond milk
1 tsp of honeydew extract
Equip Foods Grass-Fed Vanilla Protein (PURELYHL for discount)
1/4 cup of Rx Sugar alullose (MARIA20 for discount)
1 tsp of vanilla extract
2/3 cup of blueberries
Toppings
2 tbsp of organic whipped cream
1/3 cup of blueberries
Method
Cook the rice, I used my instant pot (1 cup of rice + 2/3 cup of water for 12 minutes in high. Letting the steam loose naturally.)
Mix all the ingredients for the rice pudding in a bowl, except for the blueberries.
Microwave for 2 minutes. Stir well, and cook again for 1:30 minutes.
In a jar place the blueberries and top with rice pudding.
Add the toppings and enjoy!
