Ice Cream Cookie Bread

Serves 6 big slices
Ingredients
3/4 cup of gluten free raising flour
2 whole eggs
1 (473ml) whole pint of dairy-free caramel ice cream
Cookies
Optional: Granulated Monk Fruit
Instructions
Preheat the oven at 350F.
Mix all dry the ingredients in a large bowl.
Add the melted ice cream and stir until completely incorporated.
Add the wet ingredients and mix until fully incorporated.
Mix in the cookies and pour the batter into a silicone loaf baking dish.
Bake for 40 minutes.
Let it cool down completely, slice into 6 pieces and enjoy!
