For the the base of this Ice Cream Pancakes I used gluten-free flour and for the base, eggs, and healthier ice cream and some alullose and granulated monk fruit (any of these work perfeclty) to keep things sweet of course... just a game changer for your recipes and to take any of your recipes to another level!

Ice Cream Pancakes

Serves 5 pancakes
Ingredients
3/4 cup of gluten free raising flour
1 tsp of baking soda
1 tsp of baking powder
1/4 tsp of baking salt
2 whole eggs
1 cup of your favorite healthy ice cream
1/3 cup of granulated monk fruit
Instructions
Mix the dry ingredients for the pancakes, then incorporate the rest of the ingredients, stir without over mixing.
Cook on a pancake griddle for 3-4 minutes or on a skillet for 1-2 minutes per side in medium low heat.
Mix the ingredients for the frosting, top the pancakes with it, along with some whipping cream and sprinkles and enjoy!
