Irish Potato Candy, the recipe that is's simple and a must to make to satisfy that sweet tooth, in a delicious and healthy way... this is not your regular candy... this is made with healthier ingredients while also being sugar-free.



About these Irish Potato Candy:

This recipe overall is gluten-free, low sugar and dairy-free as well. I used the walnut butter from Artisana Organics to create some magic along with some sea salt flakes, and of course, some dark chocolate chips.

Irish Potato Candy

Serves 16 pieces


Ingredients

  • 1/4 cup of cream cheese (room temperature)

  • 1/4 cup of Artisana Organics Walnut Butter

  • 1 cup of unsweetened shredded coconut

  • 2 cups of powdered monk fruit

  • 1 tsp of vanilla extract

Coating

  • 2 cups of powdered monk fruit

  • 1 tsp of cinnamon

Method

  1. Mix the cream cheese and walnut butter with vanilla extra until fully incoporated.

  2. Add the powdered monk fruit and coconut and mix again until fully incorporated.

  3. Roll with your hands 16 small pieces.

  4. Refrigerate for a few minutes.

  5. Mix the ingredients for the coating and roll each candy into the mix.

  6. Enjoy!
