Italian Waffle Sandwiches

Serves 8 servings
Ingredients
For Waffles
1/2 cup of almond flour
2 tbsp of coconut flour
4 eggs
1 tsp of sea salt
Ricotta Filling
1 cup of fresh ricotta cheese
1 piece of red bell pepper
1/4 cup of unsweetened marinara sauce
1/8 tsp black pepper
1 tsp of real salt
1/8 tsp of garlic
For serving
Fresh Basil
Method
For the waffles:
Add all the ingredients into a blender and mix well, approximately 20 seconds.
Pour about 1/3 cup of the mix into a mini waffle maker and cook for 4 minutes.
Filling
Slice and remove the seeds from the bell peppers and cook them in a skillet until soft.
Add the ricotta cheese, Organic Extra Virgin Olive Oil, spices, herbs and mix well.
Serve with waffles and enjoy!
