We are showing some love to all my breakfast casserole and Benedict eggs enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the Simply Organics Hollandaise sauce, jalapeños and ranch seasoning and also, Royo Low Carb Burger Buns.

Ranch Jalapeño Benedict Egg Casserole

Serves 4 serving
Ingredients
3 pieces of Royo Low Carb Burger Buns
1/2 cup of egg whites
1/2 cup of unsweetened almond milk
1 tsp of garlic
1/4 tsp of sea salt
1/8 tsp of black pepper
1 tbsp of ranch seasoning
1/2 roasted jalapeño
Toppings
1 roasted jalapeño
1/3 cup of hollandaise sauce (used Simply Organics Mix)
1 tsp of red pepper flakes
1/2 tbsp of ranch seasoning
Method
Preheat the oven at 350F.
Mix all the unsweetened almond milk, egg whites, seasoning, protein, cinnamon and roasted jalapeño.
Cut the bread into cubes.
Add the bread to the mix and let it soak, transfer to a baking dish.
Bake for 25 minutes.
Add the toppings.
Enjoy!
