Jalapeño BLT Corn Pasta Salad

Serves 4-5


Ingredients

  • 3 cups of pasta

  • 1 tsp of sea salt

  • ¾ cup Best Foods Real Mayonnaise Real Mayonnaise

  • ¼ cup of chopped cilantro

  • 4 slices of cooked bacon

  • 1 cup of sliced cherry tomatoes

  • 2 cups of chopped romaine lettuce

  • ¼ cup of chopped red onion

  • ½ cup of canned corn (drained)

  • 2 roasted jalapeños

  • 2 tsp of taco seasoning

  • ½ cup of cotija cheese (feta cheese can work too!)

  • Red pepper flakes 


Instructions 

  1. Cook the pasta in boiling water with the salt. Drain the pasta after it is cooked and save ¼ cup of pasta water.

  2. Wash and slice the tomatoes, tomatoes and lettuce.

  3. Chop the bacon and roasted jalapeños.

  4. In a large bowl add the lettuce, cherry tomatoes and cooked pasta.

  5. Mix in the Best Foods Real Mayonnaise, taco seasoning, cilantro, and chopped red onion into the pasta bowl.

  6. Add in the corn and crushed  bacon.

  7. Serve on a plate and top with cotija cheese and red pepper flakes.

  8. Enjoy!
