Jalapeño Protein Mac N Cheese

Serves 2
Ingredients
1 cup of uncooked keto protein pasta
2 cups of water
1 tsp of sea salt
1 cup of cottage cheese
1/2 cup of shredded Gardner's Wisconsin cheddar cheese
1 tsp of sea salt
1/8 tsp of black pepper
1 tsp of garlic powder
1/2 tbsp of soy sauce
1 pack of Schoolyard Snacks Cheddar Cheese Keto Puffs
1 small roasted jalapeño chopped
Instructions
Bring the water to broil, add pinch of salt and cook the pasta in it for 5 minutes or until soft.
Reserve 1/4 cup of pasta water and drain the rest. Set the pasta aside.
Blend the cottage cheese with pasta water and seasonings.
Mix the blended cheese with pasta and mix in the jalapeños.
Add the mac n cheese in two small baking dishes.
Crush the keto cheddar cheese puffs and top the mac n cheese with part of it.
Air fry or bake for 15 minutes at 350F.
Once baked or air fried top with more crushed keto cheese puffs.
