Jalapeño Ranch Sardines Quesadillas

Serves 2
Ingredients
1 can of smoked sardines
4 slices of mozzarella cheese
2-4 tbsp of chopped pickled jalapeños
1/2 tbsp of ranch seasoning
2 low carb tortillas (or your favorite ones)
2 tbsp of chopped cilantro
2 tbsp of truffle sauce
Instructions
Drain the canned juices of the sardines.
Place a tortilla on a heating skillet and top with sardines, cheese, jalapeños and ranch seasoning.
Fold in half and cook for 1:30-2:00 minutes, until each side is crispy and golden.
Repeat with the second quesadilla.
Serve, top with truffle sauce and cilantro.
