So you know that I'm always for a cooking challenge and coming with new fun ways to use daily foods or just to step up the game of eating healthier and nutrient dense. This recipe is no news since we are using nutritious foods in a delicious scone!
For this recipe I wanted to include some biltong, and if you are not familiar with biltong then you are up to a treat. What it is is a high quality steak that has been air-dried and to the bite it's softer than jerky. It's just so good! You have to try it.

Okay, these savory muffins are dense, nourishing and flavorful. As a side dish or alone these are perfect and a super easy to make with a touch of biltong stick, cheese and bell pepper. A combination of flavors you just can't resist!
For the flour we are using, coconut and ground flax seed, so this is a very high fiber recipe! We've got eggs, biltong (of course) and cheese, preferably grassfed to make sure we are getting all the goods in a savory muffin.
This is a nutrient dense scone! High quality protein, no additives, artificial ingredients. All simple and wholesome ingredients, these savory muffins are just perfect as a snack or a side dish along with some garlic butter, how does that sound?
Check for your ingredients! I believe that it's so important to get quality ingredients no matter what type of lifestyle you follow or live by. When it comes to animal products I recommend getting grass-fed and pastured raised whenever it's possible; that also means that animals were more likely to be treated better.
Check for your sales at your supermarket, buy meats with your local farmers and asked them about how they treated and fed their animals. Eggs are now find organic and pastured raised in almost every supermarket and you'll be surprised by the difference: better taste, better yolk and higher in omega-3's.
For the biltong I used the brand Stryve that you can get on Amazon. And the ingredients here are simple and their biltong is fire, AKA, delicious!

The end result
Soft, chewy and with crispy outside, moist inside. These are just amazing, the biltong taste plays so well with the cheese and the bell peppers. Even though we are skipping the flour these are fluffy and soft thanks to the cheese, since gluten acts like the glue in conventional baking methods.
Out of the conventional here! Keto, gluten free and heavenly muffin that will be great at your next brunch with family or friends or even as a meal prep addition to pair with some veggies and protein.
Pro tip! Toast them or air fry them for a few minutes to make them even crispier and irresistible. I air fried mine for 3 minutes, but that also depends on your airfryer, I find that this changes from air fryer to air fryer.

Keto Biltong Cheese Bread

Serves 12 muffins
Ingredients
1 cup of coconut flour
1 cup of ground flaxseed
1 cup of cubed cheese
6 eggs
1/3 cup of greek yogurt
1/4 cup of MCT (or coconut oil)
1/2 red bell pepper
2 of Biltong Sticks (I used Stryve)
1 tsp of real salt
1 tsp of garlic
2 tbsp of dried parsley
1 tsp of baking soda
1/2 tsp of black pepper
Method
Preheat the oven at 350F.
Mix the dry ingredients for the bread and then add the the eggs, yogurt and coconut oil.
Pour half of the mix into twelve silicone muffin baking dishes.
Add the, bell pepper cheese and biltong in the middle (you can save some for topping).
Bake for 30-35 minutes.
Let them cool and enjoy!
