1 1/4 cup of gluten-free flour
1/4 tsp of baking salt
2/3 cup of granulated monk fruit (or regular sugar)
2 whole eggs
2 ripe bananas
1/2 cup of whole milk Greek yogurt
2 tsp of vanilla extract
1 tsp of Meyer lemon zest
1 tbsp of Meyer lemon juice
1/2 cup of unsweetened almond milk
1/2 cup of fresh blueberries
For the Blue Vanilla Frosting:
1/4 cup of Elavi Vanilla Blue Spirulina Cashew Butter
1 cup of powdered monk fruit
2 tbsp of unsweetened almond milk
Toppings:
1/4 cup of blueberries
