Lemon Cheesecake Crumble Bars

Serves 9


Ingredients

Base

  • 3/4 cup of oat flour

  • 1 banana

  • 1/4 cup of granulated monk fruit

  • 1 tsp of vanilla extract

  • 1/3 cup of Artisana Market Walnut & Cashew Butter

Lemon Cheesecake Filling

  • 1 1/4 cup of greek vanilla yogurt

  • 2 whole eggs

  • 2 tsp of vanilla extract

  • 3 tbsp of lemon (squeezed)

  • 2 tbsp of cornstarch

Crumble

  • 1 cup of Artisana Market Almond Granola

  • 1/3 cup of raspberries


Instructions

  1. Preheat the oven at 350F.

  2. Mix the dry ingredients for the base.

  3. Add the wet ingredients and mix until fully incorporated.

  4. Transfer to a 8x8 baking dish and bake for 13 minutes.

  5. Blend the ingredients for the cheesecake and pour over the baked and cooled base.

  6. Top with granola and raspberries.

  7. Bake for 30 minutes.

  8. Let it cool down completely and enjoy!
