Coconut Lemon Poppy Seed Protein Muffins

Serves 12 muffins


Ingredients

  • 1 1/4 cup of gluten-free self-raising flour

  • 2 scoops of grass-fed vanilla protein

  • 2/3 of granulated monk fruit

  • 3 eggs

  • 3 small bananas

  • 2 tbsp of poppy seeds

  • 2 tsp of vanilla extract

  • 1/4 cup of vanilla greek yogurt

  • 1/4 cup of ghee

  • 2 chopped Rise Bar  Lemon Cashew Protein Bar

Glaze

  • 1 cup of powdered monk fruit

  • 1 tbsp of lemon juice

  • 1 tbsp of almond milk


Instructions

  1. Preheat the oven at 350F.

  2. Mix all dry ingredients in a bowl.

  3. Place the bananas in a bowl and microwave for 1:30 minutes.

  4. Add the eggs, vanilla extract, ghee, yogurt, bananas and mix well with the dry ingredients.

  5. Fold in the chopped bars.

  6. Transfer the batter into 12 silicone muffin cups.

  7. Bake for 25-30 minutes and let them cool down.

  8. Mix the ingredients for the glaze, top the muffins with it and optional extra bars for decor. Enjoy!
